Perfect Reverse-Seared Ribeye Steak with Garlic Herb Butter

There are few meals more satisfying than a perfectly cooked ribeye steak. While many home cooks focus exclusively on grilling, the reverse-sear method has become my preferred approach because it delivers consistent results every time.

This technique slowly brings the steak to temperature before finishing it over high heat, creating a beautiful crust while maintaining a perfectly cooked interior. Combined with garlic herb butter, the result rivals what you’d expect from a top steakhouse.

Ingredients

For the Steak:

  • 2 thick-cut ribeye steaks (1½ to 2 inches thick)
  • 2 tablespoons olive oil
  • Kosher salt
  • Fresh cracked black pepper

For the Garlic Herb Butter:

  • 4 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1 tablespoon fresh rosemary
  • 1 tablespoon fresh thyme
  • Pinch of sea salt

Instructions

Step 1: Prepare the Steaks

Remove the steaks from the refrigerator 45 minutes before cooking.

Pat dry with paper towels.

Season generously on all sides with kosher salt and black pepper.

Step 2: Slow Roast

Preheat oven to 250°F.

Place steaks on a wire rack over a baking sheet.

Cook until internal temperature reaches:

  • 115°F for medium rare
  • 125°F for medium

This typically takes 35–45 minutes.

Step 3: Prepare the Butter

While the steaks cook, melt butter in a small saucepan.

Add garlic, rosemary, thyme, and salt.

Cook for 2–3 minutes.

Set aside.

Step 4: Sear

Heat cast iron skillet until extremely hot.

Add olive oil.

Sear steaks approximately 60–90 seconds per side.

Continue flipping every 30 seconds until a dark golden crust forms.

Step 5: Finish

Remove steaks and immediately top with garlic herb butter.

Rest for 10 minutes before slicing.
